Low-carb apple raisin loaf cake


100g of cream cheese

3 eggs

1 tsp of baking powder

1/2 scoop of vanilla whey protein

150g of apple sauce

100g of desiccated coconut

80g of sweetener (Pure Via, Swerve, Sukrin)

60g of raisins

1/2 tsp of vanilla extract


To make batter combine the cream cheese, eggs, baking powder, whey protein, coconut, sweetener and vanilla extract into a blender and blend until smooth. In a large bowl mix batter with apple sauce and raisins. Pour mixture into a loaf tin lined with baking parchment paper and cook in the over at 170c for 45min or until an inserted knife in the centre comes out clean.
