This is my favourite go-to for a chocolate fix and since we’re making it ourself we know exactly what’s going in it. Coconut oil is high in medium chain triglycerides which are a great source of stable energy and can even help to reduce hunger. Cacao powder may help to improve blood pressure and has demonstrated in studies to lower stress levels.

45g coconut oil 25g cacao or cocoa powder 20g sweetener of choice (I prefer low carb icing sweeteners like sukrin, natvia or swerve), or honey
1tbsp of peanut butter
Pinch of salt

In a heat proof bowel add the coconut oil, cacao powder, salt and sweetener. Next using a double boil method, place the bowel over a pan of simmering water on a low gas. As the coconut oil melts stir the contents until it combines into a smooth chocolate. Pour the contents into a chocolate bar latex mould (can be purchased on amazon) and spoon small dollops of peanut butter into the melted chocolate. Place the mould in the freezer for 1hr then store in the fridge.
